Abstract
The culinary industry is experiencing a shift in consumer preferences from functional aspects toward emotional experiences, one example of which is nostalgia-themed restaurants. This study aims to analyze the influence of exterior/interior design, tableware, local cuisine, atmosphere, and staff on customer loyalty through consumption value and familiarity with the restaurant as mediating variables. This study employs a quantitative approach with a causal design. Data were collected via a questionnaire administered to 212 respondents who had visited nostalgic restaurants in the Greater Solo area, using purposive sampling. Data analysis was conducted using AMOS-based Structural Equation Modeling (SEM). The results indicate that atmosphere, local food offerings, and staff have a significant influence on the development of customer familiarity and consumption value. Conversely, Tableware has a negative effect on intimacy, while the exterior/interior and perceived value do not have a significant effect on customer loyalty. These findings suggest that customer loyalty at nostalgic restaurants is influenced more by the emotional experience created through the atmosphere and the authenticity of the menu than by the restaurant's physical elements.References
